Egg Tart Recipe

Hi everyone, I hope you all stay safe and healthy. And I am here again to share some of my baking recipe. It’s been a week I did not post a while, because I was sick, 8 days straight of fever every night, so it has been tough and thankfully I am well now. And now let’s take a look the recipe.

Ingredients

Pastry :

  • 75gr all purpose flour
  • 18gr cold unsalted butter
  • 33gr water
  • Pinch of salt
  • 2gr sugar
  • 40gr room temperature unsalted butter (divided into three parts)

Custard Filling :

  • 3 egg yolks
  • 68gr sugar
  • 13gr cornstarch
  • 125gr milk
  • 1tbsp vanilla extract

How to make

  • First of all, make the pastry. In a bowl mix the all purpose flour and cold unsalted butter, you can mix it by hand
Put the flour and cold unsalted butter in a bowl
Mix until the butter blend into flour
  • Then dissolve the sugar and salt into water, and pour it into the pastry dough, mix until the dough comes together
  • Then with rolling pin, flatten the dough into square and spread evenly the first part of the room temperature unsalted butter on the dough

  • After that, fold the dough shaped into rectangular, wrap it with plastic, then put in it the fridge for an hour

  • After an hour, do the same step by flattening the dough, then spread the second part of butter, fold it and put in the fridge for 30 minutes

Put in the fridge for another 30 minutes
  • Then the last step, again flattening the dough and spread the last part of unsalted butter, but this time, do not fold the dough but roll the dough, then put it in the fridge for another 30 minutes

Roll the dough then put in the fridge for 30 minutes
  • While waiting the dough to set, we can make the custard filling. Into bowl, put the three egg yolks and add sugar in it, mix it together
Mix the sugar until dissolving with the egg yolks
  • After the sugar is dissolved, put cornstarch and start mixing it again
Mix the cornstarch into the filling batter
  • Set aside the batter, then in the pan put the milk and vanilla extract, heat the milk until it is bubbling a little in the edge then turn off the heat

  • Then add the hot milk into the filling batter, add little by little while your other hand keep mixing the batter
The custard filling
  • Then put the custard filling into the fridge for 30 minutes.
  • After 30 minutes, you can take the dough then divide it evenly into six parts

  • Prepare the muffin mould, spread some butter into the mould, then put in the dough into the mould

Press the dough until it covers the mould

  • Press the dough evenly so that it covers the mould, then pour the custard filling into the dough, about 90% of the dough
Pour the custard filling
  • Then bake it in the preheat oven for 30 – 35 minutes in 180°C, it also depends on your oven type. Please do check regularly

  • This is for 6 egg tarts recipe, if you want to make more you can double the recipe
  • The preparation needs about 2 hours, so be patient, but it is really fun though.
